Head Chef (BBQ Concept – Pre-Opening Phase)

We are seeking an experienced and passionate Head Chef to help launch an exciting new Texas style smokehouse.

During the pre-opening phase, the Chef will play a key role in developing recipes, building kitchen systems, training staff, and establishing operational standards. As the restaurant grows, this position is expected to evolve into a full-time leadership role overseeing all kitchen operations.

The ideal candidate is a hands-on leader with strong BBQ expertise, operational discipline, and a deep understanding of food safety and cost control.

Key Responsibilities Pre-Opening Responsibilities

  • Develop and document standardized BBQ recipes, including smoked meats, house-made rubs, sauces, and traditional sides
  • Create a comprehensive recipe book and kitchen operations manual
  • Design and implement prep systems, workflow, and station organization
  • Establish food safety systems, including temperature logging and sanitation procedures
  • Assist in kitchen setup, equipment planning, and smoker configuration
  • Develop structured training programs for all kitchen staff

Operational Responsibilities (Launch & Beyond)

  • Lead and supervise kitchen staff, including pitmasters, line cooks, and prep staff
  • Maintain high standards of cleanliness, organization, and kitchen discipline
  • Oversee BBQ preparation, smoking, grilling, holding, and plating for consistency and quality
  • Monitor smoking times, meat handling, and proper storage procedures
  • Ensure daily logging of freezer, refrigerator, and hot-holding temperatures
  • Enforce food safety standards and sanitation compliance at all times
  • Track, manage, and report inventory levels, including meat, dry goods, and supplies
  • Conduct regular inventory counts and manage ordering to control food costs and minimize waste
  • Maintain accurate inventory records and support cost control strategies
  • Collaborate with ownership on purchasing decisions and vendor relationships
  • Support POS system implementation and integration (experience preferred but not required)

Position Details

  • Part-time / project-based during pre-opening phase
  • Full time commitment - beginning in mid April.
  • Expected to transition into a full-time Head Chef role upon restaurant launch
